Saffron Almond Chicken

Serves 4-6

Ingredients

3 tablespoons vegetable oil
6 boneless, skinless chicken thighs
1 medium onion chopped
1 can JYOTi Natural Saffron Simmer Sauce
1/8 cup blanched, slivered almonds, toasted
3 tablespoons cilantro, chopped fresh
Preheat the oven to 350 degrees F.

Directions

In an ovenproof, lidded sauté pan, heat the oil until it shimmers.
Add the chicken thighs and cook on one side until lightly browned; turn the thighs and cook until lightly browned on the opposite side.
Remove chicken from pan and empty out most of the oil from the pan, reserving in the pan any of the browned bits from cooking the chicken.
Return pan to heat and sauté the onion on medium until it just begins to color.
Add the Saffron Simmer sauce and 3 tablespoons of water to the pan.
Cook on medium for one minute, then return the chicken thighs to the pan.
Cover the pan and place in the oven for 30 minutes.
To check for doneness, cut open a thigh and make sure the thighs are no longer pink in the interior.
Add the almonds and cilantro.
Serve with JYOTi Natural Basmati Rice.
