Eggplant, Tomato and Potato Curry
Serves 4
Ingredients
4 tablespoons canola oil
1 cup diced potatoes
1 cup diced eggplant
1 cup diced tomatoes
1 can JYOTi Natural Classic Masala Simmer Sauce
3 tablespoons cilantro, freshly chopped
Directions
Heat oil in a medium sized lidded sauté pan.
When hot, add the vegetables and stir until lightly colored.
Add contents of the Classic Masala sauce, cover the pan and simmer gently (about 15 minutes) until the potatoes are cooked.
Serve with JYOTi Natural Basmati rice, garnished with the cilantro.
