A soothing and satisfying South Indian vegetarian dish made with yellow lentils (toor dal) simmered with fresh vegetables (eggplant, bell peppers, onions and carrots). Jyoti's Madras Sambar can be served as a soup or can be used as the base for a thick soup/stew by adding your own vegetables/meats.
